Ingredients
 

  • cups chopped cooked chicken
  • 4 oz cream cheese, room temperature
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers, crushed
  • 5 Tbsp butter, melted

Instructions
 

  • Preheat the oven to 350ºF. Lightly coat a 9×9-inch baking dish with cooking spray and set it aside.
  • In a mixing bowl, stir together the chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup until well combined. Spread the mixture evenly in the prepared baking dish.
  • In a separate bowl, mix the crushed crackers with the melted butter. Sprinkle the topping evenly over the chicken mixture.
  • Bake uncovered for 30 to 40 minutes, until the casserole is hot and bubbly.

Notes

Texture Tip: Use room temperature cream cheese for the smoothest filling. Cold cream cheese can leave lumps behind.
Watery Casserole Fix: Drain any excess liquid from the cottage cheese and make sure the cooked chicken is not wet before mixing.
Make-Ahead Tip: Assemble the filling up to 2 days in advance, but wait to add the cracker topping until just before baking so it stays crisp.
