FOR THE BROWNIES

  • 3/4 cup Salted Butter
  • 1 cup Packed Light Brown Sugar
  • 1 cup Granulated Sugar
  • 1 cup Dutch Process Cocoa Powder
  • 3/4 tsp. Kosher Salt
  • 1/2 tsp. Baking Powder
  • 2 tsp. Vanilla Extract
  • 4 Eggs
  • 1 cup Unbleached All-purpose Flour

  • Chocolate Melting Wafers
  • Natural Cocoa Powder
  • Powdered Sugar

Instructions
 

Prep, Pan, and a Head Start

  • Line a 9 x 13-inch pan with foil and grease it to ensure the slab lifts out cleanly later. Preheat the oven to 325ºF (163ºC) to help keep the brownies fudgy.

Brown Butter Base and Fudgy Batter

  • In a medium saucepan over medium-low heat, melt the salted butter. Continue heating until it foams and golden flecks appear on the bottom with a nutty aroma.
  • Stir in the packed light brown sugar and granulated sugar. Keep stirring and heating for 1–2 minutes until the mixture is hot and glossy.
  • Remove the pan from the heat. Whisk in the Dutch process cocoa powder, kosher salt, and baking powder until the mixture is dark and thick.
  • Whisk in the vanilla extract (and optional espresso powder if using). Add the eggs one at a time, whisking until smooth and emulsified after each addition.
  • Stir in the all-purpose flour just until no dry patches remain. Do not overmix to protect the fudgy texture.

Bake, Cool, and Form the Truffles

  • Pour the batter into the prepared pan and smooth the top. Bake for 26–30 minutes until edges are set but the center remains soft.
  • Allow the brownies to cool completely on a wire rack. Cooling is essential to prevent crumbling during rolling.
  • Lift the slab out by the foil and cut into 48 pieces. Discard the 4 crunchy corner pieces, then roll the remaining 44 pieces into smooth spheres using warm palms.

Coat, Finish, and Store

  • For dipped truffles, melt the chocolate melting wafers until smooth. Dip a brownie ball using a fork, tapping the handle to remove excess coating.
  • For rolled truffles, place natural cocoa powder or powdered sugar in separate dishes. Roll the balls to coat, then tap off excess.
  • Let the coating set on a waxed paper-lined sheet before storing in airtight containers at room temperature.

Notes

Dutch Cocoa Science: Dutch process cocoa is alkalized for a darker color and smoother flavor. Using natural cocoa will result in a sharper, more acidic taste and lighter appearance.
Temperature Matters: Avoid overheating the melting wafers to prevent chocolate bloom. Keep the chocolate warm and fluid, working in a steady rhythm for a glossy finish.
The Binder Hack: If the brownie pieces are too dry to roll, mix in 1-2 tablespoons of ganache or cream cheese to help the crumbs bind together.
Chill Before Dipping: Place the rolled balls in the freezer for 15-20 minutes before dipping to help them hold their shape and set the shell faster.
