Whisk the sauce ingredients in a bowl, then coat the chicken with 2 tsp of the mixture and leave it for 10 minutes. The chicken should look lightly glazed, with no excess marinade pooling in the bowl.

Add the marinated chicken and stir-fry for about 1 1/2 minutes. The pieces should change from pink to opaque throughout.
Add the cold rice and remaining sauce, then keep the rice moving for 1 1/2 minutes. Listen for a lively sizzle as the sauce darkens and coats each grain with a light sheen.
Return the eggs to the skillet with the green onions and toss just until evenly distributed, then remove the pan from the heat. The egg curds should stay visible and tender among the separated grains.
