Cut the zucchini into 1/2-inch slices, then quarter the slices so you end up with a little over 6 cups or 600–700g of chopped zucchini; lightly sprinkle with salt, place in a towel-lined or paper towel-lined colander, and let it stand for 10 minutes.
Heat the oven to 400°F (204°C) and grease a 2.5-quart baking dish.
Whisk the heavy cream and egg in a large bowl, then stir in the onion, garlic, salt, pepper, oregano, thyme, basil, feta cheese, and 3 Tablespoons (21g) breadcrumbs; fold in the blotted zucchini and spread the mixture into the baking dish, then top with the remaining breadcrumbs.
Cover the dish lightly with aluminum foil and bake for 25 minutes, then uncover, add the optional 2 Tablespoons shredded parmesan cheese or crumbled feta cheese, and bake 5 minutes more until the zucchini is tender; for extra browning, broil for the last 30 seconds.
