Whisk the 3g matcha into 70g hot water until it turns a glossy, vivid green and smells like fresh-cut greens and sea breeze. Set it aside for a moment so the foam settles into a silky top layer.
Whip the Yuzu Honey Cream Top
In a bowl, combine the heavy whipping cream, yuzu super juice, sugar, honey, and that tiny pinch of salt, then add 1/2 teaspoon vanilla bean paste. It should smell like citrus blossom and vanilla the second it hits the cream.
