Equipment

  • Waffle iron

Ingredients

  • 3 eggs
  • 1/8 cup cheddar cheese shredded
  • 1 sausage link cooked and diced
  • 1 Tablespoon bell pepper diced
  • 1 Tablespoon yellow onion diced
  • Salt/Pepper to taste
  • Nonstick Cooking Spray

Instructions

  • Coat the upper and lower waffle plates generously with nonstick cooking spray, then preheat the iron on a low to medium setting. The plates should feel fully hot before the eggs go in, but the heat should not be high enough to brown them immediately.
  • Crack the eggs into a small bowl, add the cheddar, sausage, bell pepper, onion, salt, and pepper, then whisk energetically until combined and pour the mixture into the iron right away. The beaten eggs should look slightly frothy, which helps create a lighter center.
  • Close the lid and cook for 2 minutes before checking the omelette, then continue for 1 additional minute if the center still looks wet. Steam will slow significantly once the eggs are set, and the edges should look lightly golden.
  • Turn off the heat and lift the omelette out carefully with a fork. Let hot steam escape away from your hands as you open the lid, then add chives or green onions if desired.

Notes

Heat setting: Use a low or medium setting on your waffle iron so the eggs set gently and remain tender without scorching the cheese.
Cooking cue: Avoid opening the waffle iron before 2 minutes so the eggs do not tear. The omelette is set when escaping steam slows significantly.
Storage and reheating: Refrigerate leftover egg waffles in an airtight container at 40 °F or below. Reheat in a toaster on a low setting or in a skillet to restore crisp edges.
