Instructions

Roasting

  • Heat the oven to 400F and line a large baking sheet with parchment paper. The hot oven helps the vegetables roast instead of soften, and the parchment makes the pan easier to clean.
  • Cut the broccoli into medium florets, remove the kale stems and chop the leaves, then scrub and slice the sweet potato into ¼” wide rounds. Keeping the sweet potato slices fairly even helps them finish roasting in the same window.
  • Toss the broccoli with oil, garlic, salt, and black pepper, rubbing the seasoning over the tops of the florets before arranging them down the center of the baking sheet. The broccoli should look lightly coated rather than drenched, which helps the edges brown instead of steam.
  • In the same bowl, stir together the chickpeas, oil, sriracha, and soy sauce, then spread them on one side of the sheet pan beside the broccoli. Give the chickpeas some space so they roast with a sizzle and develop firmer edges.
  • Use the same bowl again to mix the oil, curry powder, salt, and sriracha, then add the sweet potato slices and toss to coat before laying them on the remaining third of the pan. The slices should sit in a single layer so they can caramelize and turn tender in the center.
  • Roast for 10 minutes, then turn the broccoli and sweet potatoes and stir the chickpeas before returning the pan to the oven for 8 to 12 minutes more. The vegetables are ready when the broccoli is browned at the edges, the sweet potatoes are tender, and the chickpeas look slightly dried and roasted.

Quinoa

  • Add the rinsed quinoa and vegetable broth to a small saucepan, bring it to a boil over high heat, then cover and lower the heat to medium-low for about 15 minutes. It’s done when the broth is absorbed and the grains look fluffy instead of wet or compact.
  • Fluff the cooked quinoa with a fork and set it aside. The grains should separate easily and smell lightly nutty.

Kale

  • While the quinoa simmers and the pan roasts, warm 1 teaspoon oil in a large skillet and cook the kale for about 5 minutes. The leaves should shrink down and turn a deeper, vibrant green as they soften.
  • Add the salt, chili powder, and lime juice, then toss and cook for another 2 to 3 minutes. The kale should be nearly tender with a little bite left, not dull or mushy.

Serving

  • Divide ½ to 1 cup of quinoa between two bowls, then add half of the broccoli, chickpeas, kale, and sweet potatoes to each bowl. Keep the components separate for a composed bowl or mix everything together so the flavors mingle more quickly.

Notes

Quinoa Tip: For the best flavor and texture, rinse the quinoa thoroughly before cooking to remove any bitterness. Cooking it in vegetable broth instead of water also adds a delicious savory base.
Roasting Tip: To get perfectly crispy roasted vegetables with browned edges, make sure not to overcrowd your baking sheet. Give the vegetables plenty of space so they can roast instead of steam.
Meal Prep & Storage: For meal prep, store the cooked quinoa, roasted vegetables, and kale in separate airtight containers in the fridge. Assemble the bowls just before serving to maintain the best texture.
