Chocolate Cake

  • 1 3/4 cups all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 1/2 cups granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp fine sea salt
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 1/2 cup neutral oil canola or vegetable
  • 2 tsp pure vanilla extract
  • 3/4 cup hot brewed coffee or hot water
  • 12 Oreo cookies finely crushed

Cookies-and-Cream Frosting

  • 1 1/2 cups unsalted butter room temperature
  • 5 cups powdered sugar sifted
  • 1/3 cup heavy cream plus more as needed
  • 2 tsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 16 Oreo cookies finely crushed and sifted

Chocolate Drip (Optional)

  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup heavy cream
  • 1 tsp light corn syrup or 1 tsp butter

Garnish

  • Oreo cookies whole, halved, and crushed

Notes

This cake improves after a day in the fridge. For clean slices, chill before cutting and use a hot knife. To make ahead, freeze unfrosted layers and thaw before assembling.
