Equipment

  • 10x15 inch baking pan
  • Saucepan
  • Large Mixing Bowl
  • Hand-held mixer
  • wire whisk

Ingredients

Chocolate Cake

  • 2 cups granulated sugar (400 g)
  • 2 cups self-rising flour (256 g)
  • 1 cup unsalted butter, room temperature (2 sticks or 227 g)
  • 1 cup coffee (can use hot water instead) (237 g)
  • 1/3 cup unsweetened cocoa powder (39 g)
  • 1/2 cup buttermilk (120 g)
  • 2 eggs, room temperature

Chocolate Frosting

  • 1/4 cup butter (57 g)
  • 1/4 cup buttermilk (60 g)
  • 3 tablespoons unsweetened cocoa (22 g)
  • 2 1/2 cups confectioners sugar (312 g)

Turtle Topping

  • 1/2 cup chopped pecans
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup caramel sauce, for drizzling over top

Instructions

Chocolate Cake

  • Heat the oven to 350°F, line a 10x15-inch pan with parchment paper, and lightly coat the sides with nonstick spray if needed. A 9x13 pan also works, but the cake will bake up thicker and more fudgy than the shallower jelly roll pan version.
  • Whisk the granulated sugar and self-rising flour together in a large bowl, then set the bowl nearby. Mixing the dry ingredients first helps the batter come together quickly once the hot cocoa mixture is ready.
  • Place the butter, coffee, and cocoa in a saucepan and cook over heat, stirring constantly, until the mixture reaches a slow rolling boil. It should look glossy and lightly bubbling, and the chocolate aroma will become deeper as it heats.
  • Pour the hot cocoa mixture into the flour mixture and beat with a hand-held mixer, or stir by hand, for about 30 seconds until combined. The batter should smooth out quickly with no dry streaks left in the bowl.
  • Add the buttermilk and eggs, then mix on medium speed for another 30 seconds until the batter is fully blended. The finished batter should look fluid, dark, and evenly mixed without curdled spots.
  • Spread the batter in the prepared pan and bake for 20 to 25 minutes, checking as early as 17 minutes. In a 10x15 pan, the cake is done when the top springs back lightly and a toothpick comes out mostly clean with a few crumbs.

Chocolate Frosting

  • Combine the butter, buttermilk, and cocoa in a medium saucepan and bring the mixture to a slow rolling boil over medium heat, stirring the whole time. The frosting base should look smooth and shiny, not grainy or separated.
  • Take the pan off the heat and whisk in the confectioners sugar gradually, about 1/2 cup at a time. The frosting should turn pourable and satiny with no visible lumps.
  • Pour or spread the warm frosting over the warm cake right away. This step matters because the frosting settles into the surface instead of sitting on top as a separate layer.

Turtle Topping

  • While the cake is still warm, scatter the chopped pecans over the frosting, then add the semi-sweet chocolate chips and drizzle with caramel sauce. Wait just a minute or two before adding the chips if you want them to soften but still hold their shape.

Notes

Pecan tip: Toast the chopped pecans in a dry skillet for about 5 minutes before making the batter to release essential oils and enhance the toasted crunch.
Frosting tip: Always pour warm frosting over warm cake to let it seep in. If the frosting cools too much before pouring, it may crack or tear the cake surface instead of setting smoothly.
Baking tip: A shallow 10x15 pan bakes fast, so start checking doneness around 17 minutes. To avoid dry edges, pull the cake as soon as the center springs back and a toothpick has only a few crumbs.
Storage: Store covered in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For the cleanest slices after chilling, let the cake sit at room temperature briefly so the frosting softens.
