1 medium saucepan
1 boba straw
Tropical Butterfly Refresher Base
- 1 cup water
- ¾ cup white grape juice
- ¾ cup guava syrup
- 1 tablespoon passionfruit powder
- ¼ teaspoon citric acid
Butterfly Pea Powder Infusion
- 3 tablespoon hot water
- ⅛ teaspoon butterfly pea powder
Tropical Butterfly Refresher
- ½ cup Tropical Butterfly Refresher Base
- ½ cup water
- ¼ cup mango popping boba (or pineapple popping boba)
- Ice
Combine the water, white grape juice, guava syrup, passionfruit powder, and citric acid in a medium saucepan, then warm the mixture over low heat while whisking until dissolved. The base is ready when it looks smooth and evenly blended with no powdery bits floating around.
Stir the hot water and butterfly pea powder together in a small jar until the powder dissolves, then leave it to cool to room temperature. The infusion should look deep blue and clear enough to pour easily.
Add the popping boba to a tall glass, fill the glass with ice, then pour in ½ cup Tropical Butterfly Refresher Base and ½ cup water and stir gently. The drink should look cold and bright before you add the blue layer.
Slowly top the drink with the cooled butterfly pea infusion and serve with a boba straw. You’ll see the upper layer stay blue at first, then turn purple where it meets the acidic base.
Tip for Perfect Layers: For a sharp, layered look, make sure both the refresher base and the butterfly pea infusion are completely cooled to room temperature before assembling. Pour the blue infusion slowly over the back of a spoon to help it float on top.
Storage: The refresher base and the butterfly pea infusion can be made ahead and stored in separate airtight containers in the refrigerator for up to 1 week. Assemble the drink just before serving for the best results.
