Triple-Berry Cobbler Ingredients
- 2 16-ounce packages strawberries rinsed, hulled, and halved
- 2 6-ounce package blueberries rinsed
- 1 6-ounce package blackberries rinsed
- 1 cup granulated sugar plus more as needed
- 1 teaspoon crushed pink peppercorns
- 1 teaspoon vanilla extract
- 3/4 teaspoon kosher salt
- zest and juice of 1 lemon
- 1 cup plus 2 tablespoons all-purpose flour
- 1 stick cold unsalted butter (1/2 cup), diced
Procedure
Heat the oven to 375°F. Have an 8-by-8-inch baking dish and a rimmed baking sheet ready before mixing the fruit.
Stir the strawberries, blueberries, blackberries, pink peppercorns, vanilla extract, lemon zest and juice, 1/2 cup sugar, and 1/2 teaspoon salt in a large bowl, then taste and add more sugar if the berries need it. Fold in 2 tablespoons flour and transfer the fruit to the baking dish; the berries should look evenly coated rather than dusty.
Work the cold butter into the remaining 1 cup flour, 1/2 cup sugar, and 1/4 teaspoon salt with a pastry cutter or fingertips. Stop when the butter forms small pea-sized pieces and the mixture barely holds together when squeezed, without becoming a solid dough.
Place the filled baking dish on the baking sheet, scatter the topping evenly over the fruit, and bake for about 45 minutes. The cobbler is ready when berry juices bubble vigorously at the edges and the topping is pale golden brown.
Ingredient tip: Use cold butter to ensure separate, crisp pockets in the topping rather than a dense crust.
Texture tip: Let the cobbler rest for 15 to 20 minutes after baking so the flour-thickened juices settle into a rich, spoonable sauce.
Frozen berries: Use frozen berries directly without thawing and add 1 extra tablespoon of flour to manage extra moisture.
Storage and reheating: Store covered in the refrigerator and reheat individual portions in an oven or toaster oven to keep the topping crisp.
