Ingredients
 

  • 4 eggs
  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic, minced
  • 1 1/2 teaspoons Old Bay seasoning
  • 1 teaspoon sugar
  • 1/4 heaping teaspoon onion powder
  • 1 teaspoon lemon pepper seasoning
  • 3/4 teaspoon paprika
  • 1/2 teaspoon red chili flakes, or to taste
  • 2/3 cup chicken bone or vegetable broth, low sodium
  • 1 tablespoon lemon juice
  • kosher salt, optional
  • parsley, chopped, for garnish

Instructions
 

Prep the Eggs

  • Start by filling a bowl with cold water and plenty of ice, then set it nearby. Having the ice bath ready before the eggs go in ensures perfectly soft-boiled eggs.
  • Bring a medium saucepan of water to a full rolling boil, ensuring there is enough water to completely cover the eggs. Lower the eggs in gently and cook for 7 minutes for a looser center, or 7 1/2 minutes for slightly more set yolks.
  • Move the eggs straight into the ice bath as soon as the timer goes off. Let them chill for about 2 minutes, then peel them under slow running water, pat dry with paper towels, and set aside.

Build the Cajun Butter Sauce

  • Set a large skillet over low heat and melt the butter gently, keeping the heat soft so it does not separate. Stir in the minced garlic and cook for 1 minute, just until it smells fragrant and sweet.
  • Add the Old Bay seasoning, sugar, onion powder, lemon pepper seasoning, paprika, and red chili flakes. Stir for 1 minute so the spices bloom in the butter.
  • Pour in the broth, raise the heat to medium-high, and let the sauce bubble for about 6 minutes. You are looking for a slight reduction that lightly coats the back of a spoon.

Finish the Glaze and Serve

  • Stir in the lemon juice and a small splash of water to loosen the sauce, then immediately remove the skillet from the heat.
  • Whisk the sauce vigorously off the heat until it turns thick, glossy, and smooth. Taste and add kosher salt only if needed, then pour the velvety garlic butter sauce over the peeled eggs in a serving bowl and finish with chopped parsley.

Notes

Perfect Peeling: Shock the eggs in an ice bath immediately after boiling to stop the cooking process. Crack the shell lightly all over and begin peeling from the wider bottom end to keep the egg whites smooth.
Sauce Emulsion: To keep the butter sauce from separating into oily puddles, make sure to melt the butter over low heat initially, and do not over-boil the finished sauce.
Flavor Balance: Old Bay and lemon pepper seasonings add a substantial amount of salt on their own, so always taste the finished glaze before adding any additional kosher salt.
