Ingredients
 

  • 1 cup mayonnaise
  • 1/4 cup sweet white onion finely minced
  • 2 tablespoons tomato ketchup
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon lemon juice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • sprinkle black pepper

Instructions
 

  • Add the mayonnaise, sweet white onion, tomato ketchup, sweet pickle relish, lemon juice, paprika, kosher salt, and black pepper to a medium bowl, then whisk or stir until fully combined. The dressing should turn evenly pinkish-orange with the onion and relish distributed throughout and no streaks of mayo left behind.
  • Taste and adjust with more salt and black pepper if needed, then transfer the dressing to an airtight container and refrigerate it before serving. After at least 1 hour in the fridge, the texture thickens slightly, the onion mellows, and the flavor tastes more blended and balanced.

Notes

Texture tip: Mince the sweet white onion very finely with a sharp knife so it distributes evenly. Grating the onion releases excess liquid, which can make the dressing watery.
Storage: Keep the dressing refrigerated in an airtight glass jar and enjoy within 10 days. Do not freeze, as the mayonnaise-based emulsion will separate and split upon thawing.
Flavor balance: If the dressing tastes too sweet, stir in an extra splash of lemon juice to cut through the richness and restore balance.
