Ingredients
 

Salad:

  • 1 cup uncooked quinoa
  • 1 1/2 cups black beans rinsed and drained
  • 1/2 cup frozen corn defrosted
  • 1 red bell pepper diced
  • 1/4 cup diced onion
  • 1 jalapeño deseeded and minced
  • 1/4 cup chopped cilantro

Dressing:

  • 2 tablespoons olive oil
  • 1 1/2 tablespoons honey use agave or maple syrup for a vegan version
  • 2 teaspoons lime zest
  • 1/3 cup lime juice
  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin

Instructions
 

Cook the quinoa, then cool it properly

  • Rinse the quinoa thoroughly under cold water for at least 60 seconds to remove bitter saponins, using your fingers to stir it around.
  • Cook the quinoa according to package instructions until the tiny white spiral rings are visible and the texture is tender but still has a slight pop.
  • Spread the cooked quinoa out on a flat surface to let steam escape and allow it to cool completely to room temperature for 15 minutes.

Prep the mix-ins while the grains chill

  • Dice the red bell pepper and onion, mince the jalapeño, and chop the cilantro while the quinoa cools.
  • Thoroughly rinse and drain the black beans and ensure the corn is fully defrosted and drained of excess water.

Whisk the dressing and bring it all together

  • In a small bowl, whisk the olive oil, honey, lime zest, lime juice, chili powder, and ground cumin until the dressing is emulsified and unified.
  • Combine the cooled quinoa with the beans, corn, bell pepper, onion, jalapeño, and cilantro in a large bowl.
  • Pour the dressing over the salad and toss gently until every grain is coated. Serve immediately or store in the refrigerator.

Notes

Texture Tip: Avoid dressing the quinoa while it is still hot. Letting it cool properly ensures the grains stay fluffy and do not turn soft or mushy.
Flavor Secret: For a deeper smoky flavor, add half a teaspoon of smoked paprika to the dressing and top the salad with two tablespoons of toasted pepitas before serving.
Storage Advice: This salad stays fresh in an airtight container for up to 4 days. If making ahead, store the toasted pepitas separately and add them just before eating to maintain their crunch.
