Equipment

  • Microwave-safe Bowl
  • Spatula or spoon

Ingredients

  • 1 16 ounce package processed cheese food (such as Velveeta®) cut into ½-inch cubes
  • 1 15 ounce can HORMEL® Chili No Beans

Instructions

Set up the bowl

  • Add the 1/2-inch cubes of processed cheese and the can of chili into a large microwave-safe bowl. Smaller cubes are essential for an even melt without scorching.

Microwave and stir for a smooth melt

  • Cover the bowl and microwave on high for 2 minutes. Pause to stir the mixture thoroughly, ensuring you scrape the sides where cheese tends to overheat.
  • Continue microwaving for another 2.5 to 3 minutes until the mixture is steaming and fully melted. Give it a final stir until it turns glossy, uniform, and reaches a thick, silky flow.

Serve while it is at peak gooey

  • Spoon the dip into a serving bowl immediately. Serve while hot and stretchy with sturdy corn chips for the best experience.

Notes

Safety Tip: Do not leave the dip at room temperature for longer than two hours to ensure food safety. If serving at a party, keep it in a mini slow cooker on the warm setting.
Storage Tip: Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat by adding a small splash of milk and warming in 30-second microwave bursts while stirring.
Pro Tip: For a restaurant-quality finish, add a tablespoon of pickled jalapeño brine. The acidity cuts through the fatty cheese and brightens the overall flavor profile.
