Equipment

  • Mixing Bowl
  • Baking Sheet
  • Parchment Paper
  • Shallow bowls
  • Large Pot

Ingredients

  • 2 cups pepper jack cheese shredded
  • 3 jalapenos seeds removed and finely diced
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1 1/2 cups fine breadcrumbs
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • vegetable oil for frying

Instructions

  • Distribute the diced jalapenos through the shredded Pepper Jack in a mixing bowl. The pepper pieces should appear throughout the cheese rather than collecting at the bottom.
  • Compress portions firmly between your palms into approximately 1-inch balls, arrange them on a parchment-lined tray, and freeze for about 30 minutes. The shaped portions should feel firm enough to handle without shedding cheese.
  • During the freezer rest, arrange flour in one bowl, beaten eggs and milk in another, and breadcrumbs mixed with cayenne, paprika, salt, and garlic powder in a third. The egg wash should look uniform, with the spices evenly dispersed through the crumbs.
  • Bring vegetable oil to 375°F (190°C) in a deep fryer or large pot, checking it with a thermometer. A steady temperature reading is a better readiness cue than the oil’s appearance.
  • Take the firm balls from the freezer and coat each with flour, followed by egg wash and then seasoned breadcrumbs. Turn each bite to check for exposed cheese and press crumbs onto any thin patches.
  • Lower the coated bites into the oil in uncrowded batches and cook for 2 to 3 minutes. Look for a deep golden crust as the rapid bubbling begins to ease slightly.
  • Lift the golden bites with a slotted spoon and transfer them to a plate lined with paper towels. Excess surface oil should drain away while the coating stays intact.
  • Bring the freshly fried bites to the table while hot. The crust should feel crisp around a soft, melted cheese center.

Notes

Ingredient tip: Shred block Pepper Jack on the small holes of a box grater so the fine strands pack easily around the diced jalapenos without anti-caking coatings getting in the way.
Texture tip: For a stronger seal against cheese leaks, repeat the egg wash and seasoned breadcrumb layer a second time, pressing the extra crumbs on gently without squeezing the ball out of shape.
Make-ahead: Freeze breaded uncooked bites solid on a lined tray, transfer them to an airtight freezer bag, and fry directly from frozen without thawing.
Storage: Keep cooked leftovers in a covered container in the refrigerator for 3 to 4 days with dipping sauces stored separately, then reheat in the oven or air fryer until hot and crisp.
