Ingredients
 

  • 2½ cups half-and-half
  • 8 egg yolks, jumbo eggs
  • 1 cup sugar
  • 2½ cups heavy cream
  • 3 Vanilla Beans or 4 teaspoons of vanilla
  • 1/8 teaspoon salt

Instructions
 

Prepare the vanilla base

  • If you are using vanilla beans, split them lengthwise and scrape out the seeds with the back of a knife. Add both the seeds and pods to the half-and-half in a saucepan over medium heat, stirring often until the dairy is very hot but not boiling. Remove from the heat and let it steep for 30 minutes so the floral aroma fully infuses.
  • After steeping, remove the pods or strain out any large pieces of vanilla pod. The half-and-half should smell sweet, fragrant, and deeply vanilla-scented.

Build the custard

  • In a mixing bowl, whisk the egg yolks, sugar, and 2 tablespoons of non-fat dry milk powder (if using) until the mixture looks well blended and slightly thickened. It should turn glossy and a little paler as air gets worked in.
  • Slowly stream the hot half-and-half into the egg mixture, adding just a little at a time while whisking constantly. This tempering step keeps the yolks smooth instead of scrambling them.
  • Pour the mixture back into the saucepan and cook over medium heat, stirring without stopping. Once small bubbles appear around the edges and the custard base thickens enough to cling to the back of a spoon, take it off the heat right away. Do not let it boil.

Chill and churn

  • Transfer the hot custard to a large bowl, then whisk in the heavy cream, salt, and vanilla extract (if using extract instead of beans). Stir in 1 tablespoon of neutral vodka or white rum (if using), then cover and refrigerate the base for at least 24 hours so the proteins fully hydrate and the mixture becomes thoroughly cold.
  • Pour the chilled base into your ice cream maker and churn for about 20 minutes on low speed until it looks thick, airy, and softly mounded, like fresh soft serve.

Freeze until firm

  • Spoon the freshly churned ice cream into a chilled storage container and freeze it for at least 2 hours until completely firm. The texture will tighten up in the freezer, but it will remain beautifully scoopable.

Notes

Flavor Enhancement: Let the vanilla beans steep in the hot half-and-half for a full 30 minutes off the heat. This resting time draws out the unique fruity and floral notes of the Tahitian vanilla.
Texture Tip: Chilling the custard base for a full 24 hours (rather than just overnight) allows the milk proteins to hydrate completely, yielding a noticeably smoother mouthfeel.
Storage Advice: To prevent freezer burn, press a piece of parchment paper or plastic wrap directly onto the surface of the ice cream before securing the airtight lid. This blocks the air exposure that dulls flavor and creates ice crystals.
Safety Precaution: Never let the custard boil on the stove, or the egg yolks will scramble. If the mixture begins to curdle, pull it off the heat immediately, blend briefly with an immersion blender, and strain it through a fine-mesh sieve.
