Equipment

  • Large non-stick skillet

Ingredients

  • 1 Tbsp olive oil
  • 3/4 cup chopped yellow onion
  • 1 lb 95% lean ground turkey
  • 2 cloves garlic
  • Salt and freshly ground black pepper
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 cup tomato sauce
  • 1/2 cup low-sodium chicken broth
  • Iceberg or Romain lettuce leaves
  • Shredded Mexican cheese, diced Roma tomatoes, diced red onion, diced avocado, chopped cilantro, light sour cream

Instructions

  • Warm the olive oil in a nonstick skillet over medium-high heat. The oil should look fluid and glossy across the pan before the onion goes in.
  • Add the chopped onion and cook for 2 minutes, stirring until it begins to soften. The onion should smell sweet and look slightly translucent at the edges.
  • Add the ground turkey and garlic, season with salt and freshly ground black pepper, and cook for about 5 minutes while breaking the turkey into small pieces. Continue until no pink remains and the turkey is lightly browned in spots.
  • Stir in the chili powder, cumin, paprika, tomato sauce, and chicken broth, then bring the mixture to a gentle simmer for about 5 minutes. The sauce is ready when it coats the turkey and very little loose liquid remains at the bottom of the skillet.
  • Spoon the turkey mixture over lettuce leaves and finish with the desired toppings. Keep the lettuce crisp by assembling each wrap just before eating.

Notes

Texture tip: Let the turkey mixture sit for a minute before spooning it into the lettuce. That short pause takes the sharpest heat off the filling and helps preserve the leaves' crunch.
Assembly tip: Nest a smaller leaf inside a larger one, with the ribs facing opposite directions. The overlap gives weak spots a little backup.
Moisture control: If the filling seems slightly loose, use a slotted spoon so excess sauce stays in the skillet instead of collecting at the bottom of each cup.
Troubleshooting: Avoid overfilling the leaves. If a leaf is too small for the filling, use less turkey in that leaf and build a second wrap.
Storage: Keep the cooked turkey filling and fresh lettuce in separate airtight containers. Do not assemble the wraps until you are ready to serve, because the warm filling and toppings soften lettuce quickly.
