Equipment

  • large bowl
  • Skillet

Ingredients

  • 1 lb cherry tomatoes halved or quartered
  • 3 ears of corn cooked, shucked and cut off the cob
  • 2 avocados peeled, pitted and sliced
  • 1/2 red onion (medium) thinly sliced
  • 1/4 cup cilantro chopped (1/2 small bunch)
  • 2 Tbsp extra virgin olive oil
  • 2 to 3 Tbsp lime juice from 1 to 2 limes
  • 2 garlic cloves pressed or finely minced
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper

Instructions

Step 1: Prepare the Corn

  • If you’re starting with cobs, stand a small bowl upside down inside a larger bowl and slice the kernels down the sides. The kernels drop into the larger bowl instead of bouncing all over the counter. For the best flavor in this salad, cook the corn first, then char the kernels in a hot skillet with a light film of oil if you like. Spread them out and let them sit long enough to pick up brown spots before stirring. When the corn smells nutty and toasty, it’s ready.

Step 2: Make the Lime Dressing

  • The dressing is straightforward: olive oil, lime juice, garlic, salt, and pepper. You can whisk it right in the salad bowl for easier cleanup, then build the salad on top. Taste it before adding everything else, because one lime can be mellow and the next can be very sharp. Start with the lower amount of lime juice, then adjust until it tastes bright but not harsh.

Step 3: Combine and Serve

  • Add the cherry tomatoes, corn kernels, red onion, cilantro, and garlic to a large salad bowl, then place the sliced avocado on top last. Keeping the avocado until the end helps it hold its shape and stay creamy instead of breaking down.
  • Pour in the extra virgin olive oil and lime juice, then season with sea salt and black pepper and toss very gently just until combined. The salad should look glossy, colorful, and fresh, with the avocado still in neat slices rather than mashed into the bowl.

Notes

Avocado Tip: Add avocado slices just before serving to keep them from browning. For extra protection, you can toss them lightly with a little lime juice first.
Make-Ahead: You can prepare the corn, tomatoes, onion, cilantro, and dressing up to a day in advance. Store the dressing separately and add the avocado right before tossing and serving.
Onion Bite: To soften the sharp bite of the red onion, soak the thin slices in cold water for about 10 minutes, then drain well before adding to the salad.
