Equipment

  • 8x8 inch pan
  • Electric Mixer
  • Resealable bag
  • rolling pin or heavy skillet

Ingredients

Strawberry Lemonade Cake Base

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 2 teaspoons lemon zest
  • 1 tablespoon vanilla
  • 4 tablespoons lemon juice divided
  • 15 oz. package Golden Oreos or lemon flavored
  • 1/2 cup lemonade
  • 2 pints strawberries sliced

Instructions

Lemon Whipped Cream

  • Chill the mixer bowl and beaters for 30 minutes, then whip the heavy cream, powdered sugar, and vanilla on medium-high for about 2 minutes. The mixture should look thick, fluffy, and hold firm lines from the beaters without looking grainy.
  • Fold in the lemon zest and half of the lemon juice, then taste and add more lemon juice if you want a brighter finish. The cream should stay stiff and smooth, with a fresh lemon scent and peaks that stand up instead of slumping.

Icebox Cake Assembly

  • Dip about half of the Oreos in the lemonade very quickly and arrange them across the bottom of an 8x8 pan. The cookies should be moistened on the outside but still feel firm in your fingers.
  • Spread on a layer of lemon whipped cream, add sliced strawberries, then repeat with another layer of dipped Oreos, whipped cream, and strawberries. Even layers help the cake set neatly, and thinner strawberry slices keep the stack more stable.
  • Crush the remaining Oreos in a resealable bag with a rolling pin or heavy skillet, then scatter the crumbs over the top. You want a mix of small crumbs and a few chunkier bits for a little crunch on the finished cake.
  • Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight before slicing and serving cold. When fully chilled, the top feels firm and the first slice should meet gentle resistance instead of sinking.

Notes

Texture tip: Pat the sliced strawberries dry before layering so the filling stays thick and the finished slices hold their shape.
Cookie tip: Dip the cookies very quickly in the lemonade. They should be damp on the outside but still firm, not soaked.
Slicing tip: For cleaner squares, let the cake chill well before serving. An overnight chill gives the neatest slices, and a sharp knife dipped in warm water helps keep the layers tidy.
