Equipment

  • Baking Sheet
  • Parchment Paper
  • Medium bowl
  • large bowl
  • Hand mixer
  • Spatula

Ingredients

  • 2 cup crushed pretzels
  • 1 cup chopped pecans
  • 1 cup brown sugar
  • 1 cup butter melted
  • 4 cups sliced strawberries
  • 2 (8 oz) packages cream cheese softened
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 16 oz cool whip

Instructions

  • Heat the oven to 400 °F and line a baking sheet with parchment paper. The parchment keeps the sugary pretzel mixture from sticking and makes cleanup much easier.
  • Combine the crushed pretzels, chopped pecans, and brown sugar in a medium bowl, then pour in the melted butter and stir until everything is evenly coated. The mixture should look glossy and damp, with the sugar starting to cling to every piece.
  • Spread the pretzel mixture out on the prepared baking sheet and bake for 8 to 10 minutes. It is ready when the sugar looks bubbly and the pecans smell toasted, not burnt.
  • Set the pan aside and let the baked mixture cool completely, then break it into small pieces. As it cools, the coating firms up into crisp clusters that give the salad its crackle.
  • Beat the softened cream cheese, granulated sugar, and vanilla extract in a large bowl until smooth. The mixture should look silky and even, with no visible cream cheese bits.
  • Fold in the cool whip just until combined, then cover and refrigerate until ready to serve. The finished base should stay fluffy and soft, with a little resistance when you sweep a spatula through it.
  • When serving, add the sliced strawberries and cooled pretzel crunch over the cream mixture, then fold everything together right before it hits the table. The salad should look creamy and thick, with bright berries and crisp bits still clearly defined.

Notes

Moisture control: Pat the sliced strawberries thoroughly dry with a paper towel before adding them to keep the fluffy cream base from turning watery.
Ingredient tip: Soften the cream cheese completely to room temperature before mixing to guarantee a completely lump-free, silky base.
Serving tip: Fold the baked pretzel-pecan crunch and sliced strawberries into the cream mixture immediately before serving to maintain maximum crunch.
