Equipment

  • Mini muffin pan
  • Large Mixing Bowl
  • Whisk
  • Spatula

Ingredients

For the Cornbread Poppers:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

For the Honey Butter:

  • 1/4 cup unsalted butter, melted
  • 2-3 tablespoons honey
  • 1 pinch salt

Instructions

Prep the Oven and Mix the Dry Base

  • Heat your oven to 375°F (190°C) and grease a mini muffin pan very well with butter or nonstick spray. Be sure to grease the top surface of the pan as well to ensure the muffin tops release easily.
  • In a large bowl, whisk together the yellow cornmeal, all-purpose flour, granulated sugar, baking powder, and salt until evenly blended and free of clumps.

Whisk the Wet Ingredients and Build the Batter

  • In a separate bowl, whisk the milk or buttermilk with the eggs, cooled melted butter, honey, and vanilla extract until the mixture is smooth and glossy.
  • Pour the wet mixture into the dry ingredients and fold gently with a spatula. Stop mixing as soon as the flour streaks disappear to avoid making the poppers tough.
  • Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full. A small cookie scoop helps maintain uniform sizing.

Bake and Glaze While Warm

  • Bake for 12 to 15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean with just a few moist crumbs.
  • While the poppers are baking, whisk together the melted butter, honey, and a pinch of salt (plus an optional pinch of smoked paprika) in a small bowl until smooth.
  • Remove the pan from the oven and brush the honey butter glaze over the tops while they are still warm. Let the poppers sit in the pan for 5 minutes before removing to allow the glaze to soak in.

Notes

Success Tip: Always use room temperature eggs and milk. Cold ingredients can cause melted butter to seize, resulting in an uneven texture. Keeping the batter emulsified ensures a fine, soft crumb.
Storage Tip: Keep leftovers in an airtight container at room temperature for up to 2 days. Avoid the refrigerator, as it can dry out the cornmeal-based crumb.
Reheating Tip: For the best results, reheat the poppers in an air fryer at 320°F for 3 minutes to restore the crisp edges without drying out the centers.
