  • 2 pkgs refrigerated crescent rolls
  • 16 ounces cream cheese softened to room temperature
  • 1 cup white sugar
  • 1 Tbsp vanilla extract
  • 1/2 cup butter melted
  • 3/4 cup cinnamon sugar

Instructions
 

Pan Prep and First Layer

  • Heat your oven to 350 degrees F. Generously grease a 9x13 baking dish with cooking spray, or line it with parchment paper so the bars will lift out cleanly later.
  • Unroll one package of crescent rolls and lay it into the bottom of the pan in a single layer, pressing and stretching gently to reach the corners. Pinch every seam closed so it looks like one smooth sheet to keep the cream layer where it belongs.

Whip the Filling and Spread

  • In a mixing bowl, beat the room-temperature cream cheese with the white sugar and vanilla extract using an electric mixer until the mixture looks glossy and cloud-smooth, with no visible specks of cream cheese.
  • Spread the cream cheese filling evenly over the dough, nudging it all the way to the edges so you do not end up with dry, empty crescent borders.

Top Layer and the Brown-Butter Twist

  • Unroll the second crescent roll sheet onto a cutting board, pinch the seams shut, and stretch it lightly until it matches the pan dimensions. Lift it carefully with both hands and lay it over the filling like a blanket, aiming for full coverage edge to edge.
  • Take the melted butter and brown it in a skillet until it turns golden and smells like toasted nuts. Pour it evenly over the top dough. Stir a heavy pinch of flaky sea salt into the cinnamon sugar, then sprinkle it across the surface to create a sparkly crust.

Bake, Cool, and Chill

  • Bake for approximately 30 minutes, until the top is puffed and deeply golden, and the cinnamon sugar is bubbling around the edges.
  • Cool completely at room temperature, then chill in the fridge to set the cream cheese filling completely before slicing. Store the bars covered in the refrigerator.

Notes

Temperature Control: Keep the oven consistently at 350 degrees F. Higher heat can scorch the cinnamon sugar topping before the crescent roll dough is fully baked.
Seal the Seams: Be meticulous when pinching the dough seams together. Any gaps will act as leak vents, allowing the warm cream cheese filling to escape and burn against the edges of the pan.
Patience Before Slicing: Do not slice the dessert while it is still warm, or the filling will smear and the layers will slide. Ensure it is completely chilled in the refrigerator to achieve perfectly neat, bakery-style squares.
