Instructions
Heat the Oven and Set Up
Preheat your oven to 375°F. Line a baking sheet with parchment paper or a silicone mat to prevent melted marshmallow from sticking to the pan.
Fill and Seal the Crescent Triangles
Unroll the refrigerated crescent dough and separate it into 8 individual triangles, taking care to keep the dough intact.
Place approximately 8 mini marshmallows and 1 tablespoon of mini chocolate chips at the wide end of each triangle. Add a tiny pinch of smoked sea salt directly onto the chocolate if desired.
Roll the dough from the wide end toward the point. Use your fingertips to firmly pinch the side seams shut to create a sealed envelope that prevents the filling from leaking.
Brush, Crumb, and Bake
Arrange the rolls on the prepared baking sheet with at least 2 inches of space between them. Brush the tops lightly with egg white and immediately sprinkle with toasted graham cracker crumbs.
Bake for 10 minutes until the crescents are deeply golden brown and the kitchen smells like toasted sugar and chocolate.
Cool Briefly Before Serving
Remove from the oven and use a spatula to lift the rolls. Let them sit for 2 to 3 minutes so the hot filling can settle into a gooey center.
