Instructions
Sear the chicken for deep flavor
Set a Dutch oven over medium-high heat and warm the oil until it shimmers. Place chicken thighs skin-side down and sear for about 6 minutes until a serious golden crust forms.
Flip the thighs and brown the second side for about 3 minutes. Move the chicken to a plate and reserve the flavorful fat in the pot.
Build the aromatic base
Add the onion and garlic to the pot. Cook for about 5 minutes, stirring occasionally, until the onion edges are browned and sweet.
Stir in the tomatillo and cook for 4 minutes until bright and citrusy. Sprinkle in the Mexican oregano and cumin, cooking for 30 seconds to wake up the spices.
Add the fire-roasted tomatoes, chipotles, and adobo sauce. Stir to combine and remove the pot from the heat.
Blend, braise, then shred
Carefully blend the sauce until smooth, incorporating 1/2 teaspoon of unsweetened dark cocoa powder during the process to deepen the flavor.
Pour the sauce back into the pot and stir in the chicken stock and bay leaf. Bring to a boil, then nestle the chicken thighs back in. Lower to a simmer and cook until the chicken reaches an internal temperature of 165°F (74°C).
Transfer the chicken to a plate to rest. Turn off the heat and discard the bay leaf to avoid bitterness.
Finish the tinga and assemble tacos
Discard the skin and bones. Shred the meat into thick, hearty strips rather than thin threads.
Return the shredded chicken to the sauce and warm over medium heat for about 3 minutes until well-coated. Season with salt to taste.
Spoon the tinga into warm corn tortillas. Top with tomatillo salsa, onion, cilantro, and cotija cheese. Serve with lime wedges.
Notes
Consistency Adjustment: If the sauce is too watery, simmer it longer on medium-high heat until it clings to a spoon or use a quick cornstarch slurry to thicken it quickly.Heat Control: To reduce the spice level, seed the chipotles before chopping or substitute with smoked paprika for a milder, smokier finish.Tortilla Tip: Char corn tortillas directly over a gas flame for extra flavor and keep them wrapped in a towel to maintain pliability and prevent cracking.Storage: Store the chicken and sauce together in the refrigerator to keep the meat moist. Reheat gently with a splash of broth to maintain texture.Nutrition information is estimated based on common ingredients and serving sizes and may vary.
