For the Smash Tacos
- 1 pound ground pork
- 2 tablespoons white wine vinegar
- 1/2 tablespoon low sodium soy sauce
- 4 small green onions (very finely chopped, about ¼ cup)
- 4 garlic cloves minced (about 4 teaspoons)
- 2 tablespoons minced ginger
- 1/2 teaspoon kosher salt
- 8 small (street taco) flour tortillas
For Topping
- Thinly sliced cabbage
- Shredded carrots
- Chopped green onion
- Cilantro
Gently combine the pork, vinegar, soy sauce, green onion, garlic, ginger, and salt in a medium bowl using a fork or your hands. Stop when the aromatics look evenly scattered and the meat still has a loose texture.
Divide the filling into eight equal portions and spread one portion over each tortilla with your fingers or the back of a spoon. Aim for an even, very thin coating that reaches the outer edge, without a mound in the middle.
Set a cast iron or nonstick skillet over medium-high heat, add a tortilla pork-side down, and immediately press firmly with a sturdy spatula or burger press while rotating it slightly back and forth. Leave space between tortillas if cooking more than one, and sear for 2 to 3 minutes until the pork develops crisp brown edges with a steady sizzle.
Turn each taco over and toast the flour side for about 1 to 2 minutes. The underside should become golden and crisp while the pork remains attached.
Texture tip: Spread the raw pork mixture thinly all the way to the outer edges of a dry tortilla and press firmly right away in the hot skillet so the meat adheres and does not shrink into a thick center patty.
Serving tip: Hold cooked tacos on a wire rack set over a baking sheet in a warm 250°F oven while cooking additional batches, and wait to add fresh toppings until serving so the shells stay crisp.
Storage: Refrigerate leftover plain tacos without toppings in a covered container, keeping vegetables, herbs, and sauces stored separately to prevent soggy tortillas.
Reheating: Reheat un-topped tacos in a dry skillet over medium heat or in a single layer in an air fryer until warm and crisp again, then add cold toppings.
