Large slow cooker
Small bowl
Whisk
- 1 1/2 lb. sirloin steak, thinly sliced
- 1 c. low-sodium beef broth
- 1/2 c. low-sodium soy sauce
- 1/2 c. brown sugar
- 3 tbsp. sesame oil
- 1 tbsp. sriracha
- 3 cloves garlic, minced
- 3 green onions, thinly sliced, plus more for garnish
- 2 tbsp. cornstarch
- 2 c. 1"-long broccoli florets
- Sesame seeds, for garnish
- Cooked jasmine rice, for serving
Place the sliced steak in a large slow cooker, then pour in the beef broth, soy sauce, brown sugar, sesame oil, sriracha, garlic, and green onions. The meat should be mostly surrounded by the liquid so it cooks evenly and picks up flavor from the start.
Cover and cook on low for 3 1/2 to 4 hours until the beef is cooked through and tender. When it is ready, the beef should be easy to pull apart with a fork and the kitchen should smell like garlic and sesame.
Spoon a few tablespoons of the hot cooking liquid into a small bowl and whisk it with the cornstarch until smooth, then stir that mixture back into the slow cooker and toss with the beef. The sauce will go from thin to glossy as it combines, and a lump-free slurry keeps the texture smooth.
Add the broccoli florets, cover again, and cook 20 minutes more. The broccoli should turn bright green and become crisp-tender, not soft or mushy.
Serve the beef and broccoli over cooked jasmine rice, then finish with sesame seeds and more green onions. The sauce should lightly coat the rice and cling to the beef in a shiny glaze.
Texture Tip: For the most tender result, find the long fibers in the steak and slice thinly across them. Shorter muscle fibers mean a more tender bite.
Flavor Tip: If you have time, sear the beef in a hot skillet before adding it to the slow cooker for a richer, more savory flavor.
Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat gently in the microwave or on the stovetop.
