Ingredients

Ingredients

  • 1 cup cold eggnog
  • 1/2 tsp ground nutmeg plus more for garnish
  • 1 (3.4-oz.) box instant vanilla pudding mix
  • 4 oz cream cheese cubed and at room temperature
  • 1/3 cup powdered sugar
  • 2 Tbsp bourbon, spiced rum, or brandy (optional)
  • 2 cups cold heavy cream
  • 1 (9-in.) graham cracker crust (homemade or store-bought)

Instructions

Whisk the eggnog base

  • In a large bowl, whisk the cold eggnog with the ground nutmeg and instant vanilla pudding mix for about 2 minutes. You are looking for a thickened, soft-set consistency, like a loose pudding that slowly ribbons off the whisk.

Whip the creamy topping to stiff peaks

  • In a stand mixer with the whisk attachment, beat the cream cheese, powdered sugar, and bourbon, if using, on medium speed for about 1 minute until it looks smooth and glossy with no visible bits.
  • Pour in the cold heavy cream, increase to medium-high, and beat 2 to 3 minutes until stiff peaks form. The mixture should stand tall when you lift the whisk and look velvety, not grainy.

Fold for a light, fluffy custard

  • Scoop 1 cup of the whipped cream mixture into the eggnog pudding and fold gently with a spatula, turning the bowl as you go, until the color looks even.
  • Add 1 cup more of the whipped cream mixture and fold again until fluffy and uniform. Stop as soon as it looks airy to avoid knocking out the volume.

Fill, chill, and finish

  • Spoon the eggnog filling into the graham cracker crust and smooth the top. Cover and refrigerate for 12 hours or overnight. This long chill is essential for getting clean slices.
  • Scrape the remaining whipped cream mixture into an airtight container and refrigerate until serving time to keep it stable.
  • Right before serving, spread or dollop the reserved whipped cream on top, then dust with extra nutmeg for aroma and a festive finish.

Notes

Storage Tip: Store leftovers covered in the refrigerator for up to 3 days. To maintain the best texture, keep the pie away from strong-smelling foods like garlic or onions.
Make-Ahead Secret: This pie can be prepared up to 24 hours in advance, as the flavors meld and the texture becomes even more velvety after a full day in the fridge.
Freezing Instructions: You can freeze this pie for up to 1 month without the final whipped topping. Thaw in the refrigerator for 24 hours before adding the fresh cream and nutmeg garnish.
