Equipment

  • Baking Sheet
  • Parchment Paper
  • Large Mixing Bowl
  • Medium Cookie Scoop

Ingredients

  • 1 lb ground breakfast sausage (uncooked)
  • 8 oz cream cheese (softened to room temperature)
  • 1 1/2 cups Bisquick or similar biscuit mix
  • 1 1/2 cups shredded cheddar cheese
  • 4 cups frozen hashbrowns (thawed)

Instructions

  • Set the oven to 400°F (200°C) and cover a baking sheet with parchment paper. The parchment keeps melted cheese from bonding to the pan while the bottoms brown.
  • Work the sausage, cream cheese, biscuit mix, cheddar, and thawed hash browns together in a large bowl, using clean hands if a spoon struggles with the mixture. Stop when the mixture looks evenly blended, with no cream cheese lumps or dry patches, and feels tacky enough to hold together.
  • Portion the mixture into balls about 1 1/2 inches across, press each one firmly together, and arrange them on the lined sheet with space between them. Each ball should hold its shape without cracking, and the gaps should keep neighboring bites from touching as they bake.
  • Bake for 20 to 25 minutes, turning the sheet halfway through if one side browns faster than the other. Look for golden surfaces and browned bottoms, but confirm that the sausage has cooked through rather than relying on exterior color alone.
  • Let the bites settle briefly on the baking sheet before lifting them off and serving warm. They should feel sturdier as the melted cheese firms up, making them easier to move without breaking.

Notes

Texture tip: Squeeze thawed hash browns in a clean towel or paper towels until they feel damp rather than wet so excess moisture does not create steam and prevent browning.
Ingredient tip: Use uncooked breakfast sausage and thoroughly softened cream cheese; pressing them together with clean hands blends the egg-free mixture evenly without leaving cold lumps or dry pockets.
Serving tip: Let the baked bites rest briefly on the parchment-lined pan before lifting them so the melted cheese firms up and the bottoms do not tear away.
Storage and reheating: Refrigerate leftovers promptly in a covered container without crushing them, then reheat spaced apart on a parchment-lined sheet in the oven to restore crispness.
