Equipment

  • large bowl

Ingredients

  • 3/4 cup good quality root beer
  • 1/2 cup milk I used 1%, but skim may be used
  • 1 (3.4-ounce box) instant vanilla pudding mix sugar free may be used
  • 1-2 Tbsp root beer extract
  • 1 (8 oz) tub Cool Whip Free thawed
  • 1 prepared graham cracker crust
  • Cherries and whipped cream for garnish (optional)

Instructions

  • Whisk the root beer, milk, root beer extract, and instant pudding powder in a large bowl for about 2 minutes, continuing until thickened. The initial fizz should settle, leaving a creamy mixture that falls from the whisk in a thick ribbon.
  • Fold the thawed Cool Whip into the thickened pudding with broad, gentle strokes. Stop when the filling looks evenly colored and fluffy, with no white streaks or frozen lumps.
  • Transfer the filling to the prepared graham cracker crust and freeze for approximately 8 hours or overnight. The center should feel firm rather than loose or sloshy before cutting.
  • Cut the frozen pie into portions, add the optional whipped cream and cherries if desired, and keep the remaining pie in the freezer. A fully set portion should hold its shape with a creamy, frosty interior.

Notes

Ingredient tip: Use instant vanilla pudding mix, chilled root beer, cold milk, and thawed Cool Whip so the base thickens properly and folds smoothly without lumps.
Flavor tip: Start with 1 tablespoon of root beer extract, taste the thickened pudding mixture, and add more within the listed range only if you want a stronger soda flavor.
Serving tip: Let the frozen pie soften just enough for a sharp knife dipped in warm water and wiped dry to press cleanly through the crust without sawing.
Storage: Keep the firm pie covered in the freezer to protect it from freezer air and odors, and add garnishes right before serving.
