Equipment

  • large bowl
  • Bread loaf pan
  • Cast Iron Skillet
  • Cutting board

Ingredients

For the chicken:

  • 2.5 lbs boneless chicken thighs
  • 2 tbsp olive oil
  • salt & pepper to taste
  • 4 tbsp Chicken Shawarma seasoning blend (you can also make your own by combining 1 tbsp thyme, 1.5 tbsp garlic powder, 1 tbsp smoked paprika, 1/2 tbsp Aleppo pepper, 1/2 tsp cayenne pepper, 1/2 tsp turmeric, 1/2 tsp cumin, 1/4 tsp cardamom, 1/2 tsp cinnamon, 1/8 tsp nutmeg)
  • 0.5 lemon, juiced
  • 2 tbsp plain Greek yogurt
  • 0.5 red onion, thinly sliced

For the bowls:

  • 3 cups Romaine lettuce, chopped
  • 2 cups cooked jasmine rice
  • 1 English cucumber, sliced or chopped
  • 1 pint cherry tomatoes, halved
  • thinly sliced red onion for topping
  • fresh chopped parsley and/or dill for topping
  • crumbled feta cheese for topping
  • hummus, tzatziki, and/or baba ghanoush for topping

Instructions

Marinate and Build Flavor

  • In a large bowl, combine the chicken thighs, olive oil, shawarma seasoning, salt, pepper, lemon juice, Greek yogurt, and thinly sliced red onion. Mix with your hands or a spoon until the chicken is evenly and thoroughly coated.
  • For the best flavor, cover the bowl and refrigerate for at least 2 hours, or up to overnight. If short on time, you can proceed, but the flavor will be less intense.
  • Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 30 minutes to ensure even cooking.

Bake in a Loaf Pan

  • Preheat your oven to 425°F (220°C).
  • Pack the marinated chicken tightly into a standard bread loaf pan, pressing down firmly to create a compact loaf. This method helps the chicken cook in its own juices, keeping it incredibly moist.
  • Bake for 45 to 55 minutes, until the top is browned and the chicken is cooked through.

Rest, Slice, and Sear

  • Carefully remove the loaf pan from the oven and pour off any excess juices (you can save them for flavoring rice or broth). Invert the chicken loaf onto a cutting board and let it rest for 5-10 minutes.
  • Slice the chicken loaf into thin, shawarma-style strips.
  • Heat a cast-iron skillet or other heavy-bottomed pan over high heat with a touch of oil. Working in batches to avoid overcrowding, add the sliced chicken in a single layer. Sear for 1-2 minutes until the edges are deeply browned, crisp, and slightly charred.

Assemble the Bowls

  • Build your bowls by starting with a base of chopped romaine and cooked jasmine rice. Pile on the hot, crispy chicken, cucumber, cherry tomatoes, and extra sliced red onion.
  • Finish by topping with crumbled feta cheese, fresh parsley or dill, and generous servings of hummus, tzatziki, and/or baba ghanoush.

Notes

Best Chicken Choice: For the most tender and flavorful results, use boneless, skinless chicken thighs. Their higher fat content prevents them from drying out during the two-step cooking process.
Crisping Secret: To achieve those signature crispy, charred shawarma edges, sear the sliced chicken in a very hot skillet in a single layer. Do not overcrowd the pan, as this will cause the chicken to steam instead of sear. Work in batches if needed.
Meal Prep Tip: For best results, store each component separately in airtight containers in the refrigerator for up to 4 days. Reheat the chicken in a hot skillet or an air fryer to revive its crispy texture before assembling the bowls.
Don't Skip the Rest: Allowing the chicken to rest for 5-10 minutes after baking is crucial. This step allows the juices to redistribute throughout the meat, ensuring every bite is moist and tender.
