Ingredients
 

  • 3 Tablespoons ground cinnamon 21g
  • 2 teaspoons ground ginger 5g
  • 1 and 1/2 teaspoons ground nutmeg 4g
  • 1 teaspoon ground cloves 3g
  • 1 teaspoon ground allspice 2g
  • pinch ground black pepper small pinch, less than 1/8 teaspoon

Instructions
 

  • Set a fine-mesh sieve over a dry small bowl and pass the cinnamon, ginger, nutmeg, cloves, allspice, and black pepper through it. Press any ginger clumps through with a spoon until the powder falls freely into the bowl.
  • Whisk the spices briskly until no darker streaks or concentrated patches remain. The blend should have a uniform color and release a warm, earthy autumn aroma when you lean over the bowl.
  • Transfer the mixture to a dry jar with a tight seal, using a small funnel to keep the rim clean. Tap the sides of the jar gently to settle the powder and release trapped air without packing it down.

Notes

Storage: Keep the spice blend in a dry, airtight glass jar in a cool, dark cupboard or pantry drawer. Avoid placing it near the heat and steam of the stove or dishwasher, and do not refrigerate it. It will maintain peak quality for 1 to 2 years, depending on the age of your individual spices.
Ingredient tip: Use freshly grated whole nutmeg if possible, as it provides a brighter aroma than pre-ground nutmeg. Check that your older ground spices smell sweet and pungent rather than dusty before mixing.
Texture tip: Sift the spices through a fine wire strainer before whisking to break apart any stubborn ginger clumps and ensure an even, uniform blend.
