Prep and Smooth the Base

  • Heat your oven to 300°F (150°C), then line a baking sheet with parchment paper so the rounds release cleanly. I like the parchment to lie flat, because tugging it later can crack the delicate edges.
  • Blend the cottage cheese with an immersion blender or food processor until it looks completely smooth, like a thick, creamy sauce. Any curds left behind can bake into little lumps, which makes the texture feel less bread-like.

Build the Yolks, Then Whip the Whites

  • In a small bowl, whisk the egg yolks with the blended cottage cheese until the mixture looks uniform and glossy. Whisk in the monk fruit sweetener if using, then gently stir in the Parmesan and nutritional yeast so the flavor is evenly spread.
  • In a separate clean bowl, beat the egg whites with the cream of tartar until stiff peaks form. You want a bright white, thick meringue that holds sharp ridges, and looks stable rather than foamy or wet.

Fold, Shape, and Bake

  • Using a spatula, fold the cottage cheese mixture into the egg whites just until you no longer see streaks. Keep your movements gentle and deliberate, because the trapped air is what becomes that fluffy lift in the oven.
  • Spoon the batter into 10 fluffy rounds on the baking sheet, using about 1/3 cup each. Shape them about 5 inches wide and 3/4 inch thick, and leave a little space between, because they need room to set without steaming each other.
  • Bake for about 30 minutes or until golden brown and set, flipping the pans halfway through baking. The tops should feel dry to the touch and look lightly bronzed, with a warm, savory aroma.

Cool and Let the Texture Transform Overnight

  • Cool the rounds completely on a wire rack, because air underneath prevents soggy bottoms. At this stage they will feel crisp and a bit crumbly, so do not judge them yet.
  • Store the cooled bread in a Ziplock bag or airtight container overnight. By morning, the moisture redistributes and the texture turns soft, fluffy, and pleasantly chewy, perfect for sandwiches.

Notes

Stiff Peaks Test: When you lift the beaters, the tip of the meringue should stand straight up without curling over. If you turn the bowl upside down carefully and it stays put, it is ready.
Use 4% Cottage Cheese: Using full-fat cottage cheese keeps the crumb tender and less dry. Avoid fat-free versions, as they tend to bake up brittle and disappointing.
The Overnight Bag Trick: Sealing the freshly baked, crisp rounds in a bag overnight traps residual moisture. This humidity softens the crust and evens out the crumb, transforming it into the perfect low-carb sandwich texture.
