Equipment

  • 9x13-inch baking dish
  • Mixing Bowl
  • Whisk

Ingredients

  • 6 tablespoon butter
  • 1 cup pecans
  • 1.5 cup self-rising flour
  • 1.5 cup granulated sugar
  • 0.66 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1.5 cup brown sugar
  • 1.5 cup hot water

Instructions

Heat the pan and start the butter

  • Set the oven to 350 degrees Fahrenheit and slide your 9x13-inch baking dish inside to preheat, which helps start the bottom layer cooking immediately.
  • Drop the 6 tablespoons of butter into the hot dish and let it melt in the oven until it foams and turns into a deep golden brown butter with a nutty aroma.

Toast the pecans right in the butter

  • Scatter the cup of pecans over the melted brown butter and toast them in the oven for about 5 minutes until they are fragrant and slightly darker.
  • Carefully remove the dish from the oven and set it on a sturdy surface, keeping the butter hot.

Mix a tender batter, then layer without stirring

  • In a bowl, whisk together the self-rising flour and granulated sugar, then pour in the milk and vanilla extract, stirring until the batter is smooth and pourable.
  • Pour the batter gently over the butter and toasted pecans without stirring to ensure the layers stay distinct for the sauce to form.
  • Sprinkle the brown sugar evenly over the batter, then slowly pour the hot water over everything without stirring.

Bake until golden and glossy

  • Bake for 30 to 35 minutes until the top is golden brown and the center has a slight wobble, creating a crisp top and a glossy caramel sauce underneath.

Notes

Temperature Precision: Aim for an internal temperature around 200°F in the center to ensure the top is set and cake-tender while the sauce remains luscious.
The Non-Stirring Rule: Do not stir the layers after pouring; the cobbler relies on gravity and heat to separate the crust from the caramel sauce.
Storage Tip: Store in an airtight container for up to 4 days and reheat in a 300°F oven to maintain the crispiness of the topping.
