Equipment

  • 12-inch cast iron skillet

Ingredients

Chicken

  • 1.4 lb chicken thighs boneless skinless
  • ½ teaspoon chili powder or more
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 2 tablespoons olive oil

Peaches

  • 2 yellow peaches medium size, thoroughly washed, cored, and sliced
  • 3 tablespoons honey or more
  • ½ lemon half a lemon freshly squeezed or more
  • 2 tablespoons butter

Instructions

How to cook chicken

  • I start by seasoning the chicken thighs all over with chili powder, Italian seasoning, salt, and pepper. The seasoning gives you a savory base with a little warmth, and I try to coat the surface evenly so every bite tastes finished.
  • I set a 12-inch cast iron skillet, or another similar high-sided pan, over medium heat and let it warm up for 2 minutes. This short preheat matters more than people think. A properly heated pan helps the chicken brown instead of sticking and sulking.
  • I pour in the olive oil, add the chicken thighs, and leave them alone on medium heat for 5 minutes. Trust me, this is the moment to keep your hands off. You want a real sear, not pale chicken. Listen for a steady sizzle.
  • I flip the chicken, lower the heat to low-medium, and cook for about 5 more minutes or a bit longer until it is cooked through, then I remove it from the heat. The second side finishes more gently. I like how the lower heat keeps the outside from getting too dark before the inside is done.
  • I lift the chicken out of the skillet and set it aside. Leave the pan as is. Those browned bits and juices are where the sauce starts tasting extra good.

How to cook peaches

  • I add the sliced peaches to the same empty skillet over medium heat and cook them lightly for about 5 minutes, being careful not to overdo it. You want them tender, glossy, and still holding their slices. If they slump into jam, they have gone too far.
  • At the end, I add the honey, lemon juice, and butter, then stir everything together. The butter smooths the sauce, the honey gives shine, and the lemon wakes the whole skillet up in one quick hit.

Assembly

  • I return the cooked chicken to the skillet, nestling it in between the peaches, and reheat it briefly before taking the pan off the heat. This quick finish lets the chicken pick up that glossy peach sauce without overcooking.
  • I top it with fresh thyme before serving. That last touch adds a fresh, woodsy note that makes the sweet peaches and savory chicken feel pulled together.

Notes

Ingredient Tip: Use firm, ripe yellow peaches for the best texture. Very soft peaches can break down quickly and make the sauce looser.
Cooking Tip: Let the skillet heat properly before adding the chicken so it sears well instead of sticking. If the chicken resists when you try to turn it, give it another moment.
Sauce Tip: If the sauce seems too thin, let it bubble a little longer so it tightens naturally. If it gets too thick or sweet, add a little more lemon to rebalance it.
Variation: If you want extra texture, finish the dish with toasted breadcrumbs mixed with chopped pecans and fresh thyme right before serving.
Storage: Store leftovers covered in the refrigerator once cooled. The peaches will soften more as they sit, so the texture will be gentler the next day.
Reheating: Warm leftovers gently in a skillet over low heat or use short microwave bursts. Heat only until the chicken is warmed through so it stays juicy.
Freezing: This dish is best enjoyed fresh. Freezing the finished dish is not ideal because the peaches lose too much texture after thawing.
