Baking Sheet
Vegetable peeler
Mandoline slicer
- 12 ounces carrots peeled and sliced into thin planks
- 2 tablespoons melted butter
- 2 cloves garlic pressed
- 1 teaspoon dried rosemary
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon chopped fresh parsley
Brown the Butter and Coat the Carrots
Warm the 2 tablespoons melted butter in a small pan just long enough for it to deepen in color and smell nutty, almost like toasted hazelnuts. That is the moment to pull it off the heat before it goes too far.
Stir the 2 cloves garlic, pressed, and 1 teaspoon dried rosemary into the warm butter. Toss the peeled carrot planks in this fragrant mixture until every piece looks glossy and evenly coated.
Roast and Add the Parmesan
Arrange the carrots on the baking sheet in a single layer, leaving space between them so the hot air can circulate. Roast for 15 minutes, until the edges begin to color and the kitchen smells sweet and garlicky.
Sprinkle the carrots evenly with the 3 tablespoons grated Parmesan cheese, then slide the tray back into the oven. Roast for another 10 minutes, or until the cheese is melted, lightly browned, and bubbling around the edges.
Crispy Crust Secret: Slice the carrots into uniform 1/2-inch planks and avoid overcrowding the baking sheet so they roast evenly and caramelize without steaming.
Cheese Timing: Add the Parmesan only during the final 10 minutes of cooking. This gives the cheese enough time to melt and brown beautifully without burning or turning bitter.
Make-Ahead Prep: You can peel and slice the carrots in advance and store them dry in the fridge. For the best flavor, brown the butter and add the freshly grated cheese just before roasting.
Reheating: Warm leftovers in an oven or air fryer to restore the crispy cheese texture. Avoid the microwave, as it traps steam and makes the carrots and topping soggy.
