Pour 180ml strong coffee into a small, wide, shallow dish so dipping is easy. Let it cool until it is room temperature, it should feel neutral, not warm, when you touch the dish.

Mascarpone cream base
Separate the eggs, then put the whites in a clean bowl and the yolks in a larger mixing bowl. Add half of the 60g granulated sugar to the yolks and beat until the mixture turns pale yellow and looks thicker, like a soft ribbon when it falls from the whisk.
Add 250g mascarpone cheese, 130ml cold double cream, and 1 tsp vanilla extract to the yolks. Beat just until it becomes smooth, thick, and holds a gentle mound.

Layer, chill, ganache, then slice

Spread half the mascarpone cream over the cookie layer. Add another layer of coffee-dipped cookies, then finish with the remaining cream, smoothing the top.

For the ganache, break 90g chocolate into a bowl. Heat 110ml double cream over low-medium until it starts to bubble, then pour it over the chocolate and stir until glossy.
Let the ganache cool slightly, then pour it over the set trifle and tilt the dish to spread. Chill for 15 minutes before serving once the top is set.
