One Pot Chicken Parmesan Pasta

Ingredients
 

  • 2 tbsp Olive oil
  • 2-3 Boneless skinless chicken breasts
  • 1 pinch Salt and pepper
  • 1 tsp Italian seasoning
  • 1 tsp Garlic powder
  • 1 Sweet onion
  • 12 oz Pasta
  • 24 oz Marinara sauce
  • 32 oz Chicken stock
  • 0.5 cup Parmesan cheese
  • 1 cup Mozzarella cheese
  • Freshly minced basil

Instructions
 

Sear the chicken and start the flavor

  • Warm a large pot or deep skillet over medium heat, then pour in 2 tbsp Olive oil. Add the chicken and season it right in the pot with 1 pinch Salt and pepper, 1 tsp Italian seasoning, and 1 tsp Garlic powder, then toss so every piece looks lightly dusted and glossy.
  • Let the chicken cook about 5-7 minutes, tossing occasionally, until it is mostly cooked and lightly browned in spots. The goal is juicy, not finished, then slide it onto a plate so it does not overcook.

Build the sauce base and simmer

  • Add the diced Sweet onion to the same pot and sauté for 2-3 minutes, until it turns soft and smells sweet and savory. As it releases moisture, scrape the bottom to deglaze and lift up the browned fond, capturing all that seared chicken flavor.
  • Pour in the 24 oz Marinara sauce and 32 oz Chicken stock, then bring it to a boil. Once it bubbles confidently, dial it back so it holds a steady simmer, maintaining gentle movement rather than a hard boil.

Cook the pasta, then finish with cheese and basil

  • Stir in the dry 12 oz Pasta and return the chicken to the pot. Cover and cook for 10-15 minutes, stirring now and then so the noodles do not glue themselves to the bottom. You will notice the sauce thicken as the pasta starch releases.
  • When the pasta is cooked to your preferred level of doneness, turn the heat down so it is no longer boiling. Stir in 0.5 cup Parmesan cheese and 1/2 cup of the shredded Mozzarella cheese, mixing until everything turns glossy and melted.
  • Top with the remaining mozzarella and finish with Freshly minced basil. Allow the basil to hit the hot surface to instantly release its fresh aroma before serving.

Notes

Cooking Secret: To achieve a smooth and creamy sauce, always lower the heat before stirring in your cheeses. Adding cheese to a vigorous boil can cause the proteins to clump and turn rubbery.
Texture Tip: If the pot begins to look dry before the pasta has reached al dente, simply add warm splashes of chicken stock as needed to keep the noodles submerged and the sauce fluid.
Storage Tip: Store leftovers in an airtight container in the fridge. When reheating, add a small splash of broth or water to loosen the sauce, as the pasta will absorb liquid overnight.
