One-pan French Onion Chicken Orzo

Ingredients
 

for the onions:

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 2 large yellow onions sliced
  • 1 tsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp pepper

for the chicken:

  • 6 bone in, skin on chicken thighs
  • 3 Tbsp olive oil
  • 1 tsp balsamic vinegar
  • 6 cloves minced garlic
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper

for the orzo:

  • 1 ½ cups uncooked orzo
  • 2 cups salted chicken stock
  • 1 cup heavy cream
  • green onions chopped optional for topping

Instructions
 

Caramelize the onions

  • Set a large oven-safe pan over low-medium heat (cast iron is ideal). Add 1 Tbsp butter and 1 Tbsp olive oil, melting them together until the pan is glossy.
  • Add the sliced onions and cook for at least 20 minutes, stirring often. Look for the onions to become sweet, deeply golden, and soft enough to smear when pressed.

Season the chicken

  • While the onions cook, place the chicken thighs in a large bowl with olive oil, balsamic vinegar, garlic, dried thyme, salt, and pepper. Toss until evenly coated and let sit to lose the fridge chill.

Build the base, then sear

  • Once the onions are golden, stir in the balsamic vinegar, dried thyme, salt, and pepper. Cook for one minute until fragrant, then scoop the onions out and set them aside, leaving the browned bits (fond) in the pan.
  • Adjust the heat to medium and add a tablespoon of olive oil. Pan-fry the chicken thighs for 1-2 minutes per side until the skin is golden and crisp.
  • Remove the chicken and add the orzo to the pan drippings. Stir for 1-2 minutes until toasted and nutty, then turn off the heat.

Bake it all together

  • Stir the caramelized onions back into the toasted orzo. Pour in the chicken stock and heavy cream, scraping the bottom of the pan to release the flavor-packed fond.
  • Nestle the chicken thighs on top of the mixture, keeping the skin exposed. Cover and bake in a 425 °F oven for 20-30 minutes until the orzo is tender and chicken reaches 165°F.
  • Top with chopped green onions if desired and serve immediately while the chicken skin is still crackly.

Notes

Caramelization Tip: True caramelization is a slow conversion of sugars. If the pan looks dry, lower the heat and add a splash of water to prevent scorching.
Texture Secret: Toasting the orzo before adding liquid ensures the grains stay distinct and al-dente rather than turning into a mushy casserole.
Temperature Guideline: Always use a meat thermometer to pull the chicken at exactly 165°F for the juiciest results.
Storage & Reheating: Orzo will absorb liquid as it sits. When reheating, add 2-3 tablespoons of broth to bring back the creamy sauce consistency.
