Set your onion rings into a large, shallow container and pour in the buttermilk, turning the rings so every surface gets coated. Cover and refrigerate for at least one hour, or overnight, to help the onions relax and the coating cling better.
Preheat, pair the rings, then stuff with cheese
Heat the oven to 425°F and line a baking sheet with foil. Pull the onion rings from the buttermilk and let the excess drip off for a moment.
