Equipment

  • Mixing Bowl
  • Hand mixer or wooden spoon
  • Cookie Scoop

Ingredients

  • 2 1/2 cups quick oats
  • 1 cup creamy peanut butter (not all-natural)
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini m and m's

Instructions

  • Add all ingredients into a mixing bowl. Use a wooden spoon or a handheld mixer to combine together.
  • Shape into balls, about 1 inch in size, and place on a plate or airtight container.
  • Eat right away or refrigerate for 30 minutes to 1 hour before serving.
  • Store energy balls in a covered container in the fridge.

Notes

Peanut butter choice: Use conventional creamy peanut butter instead of natural styles. Natural peanut butter separates easily and can make the balls crumble instead of holding a clean shape.
Chilling tip: Chill the mixed dough for 15 minutes in the freezer or 30 minutes in the fridge before rolling to prevent sticky hands and help the balls hold their shape.
Storage: Keep the energy balls in a covered container in the refrigerator for up to 2 weeks to keep them firm and prevent the chocolate from softening.
Freezing: Arrange the rolled balls in a single layer on a plate, freeze until solid, and then transfer to a freezer-safe container. This prevents them from clumping together.
