Equipment

  • 9-inch Springform Pan
  • Small saucepan
  • large bowl
  • Kitchen scale

Ingredients

  • 1/2 pound butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 8 ounces sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

TOPPING AND MIDDLE OF CAKE

  • 1/2 cup chopped walnuts
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Instructions

Brown the Butter Twist

  • Melt the butter in a small saucepan over medium heat, letting it foam and then quiet down as the milk solids toast. When it smells nutty and you see golden-brown specks, immediately pour it into a bowl so it does not keep darkening.
  • Chill the browned butter just until it firms back up to a soft, spreadable, room-temperature texture, not rock-hard. This is the sweet spot for creaming, it should press like soft clay under a spoon.

Mix the Batter

  • Heat the oven to 350 degrees. In a large bowl, cream the softened browned butter and sugar for 3-4 minutes until pale and fluffy, and you can smell that toasted, caramel-like note.
  • Beat in the eggs, then add the sour cream and vanilla, mixing on medium speed until the batter looks smooth and glossy.
  • In a second bowl, stir together the flour, baking powder, baking soda, and salt until the mixture looks evenly blended with no streaks.
  • Add the dry mixture gradually to the creamed mixture, beating after each addition just until the flour disappears. The batter will be thick and plush, like a soft frosting.

Streusel, Layering, and Baking

  • Stir the walnuts, sugar, and cinnamon together for the topping and middle, then add a small pinch of cardamom for that warm, complex lift if desired.
  • Butter a 9-inch springform pan, then spread in half the batter, nudging it into the corners so you do not leave air pockets.
  • Sprinkle half of the cinnamon mixture evenly over the batter to create that signature cinnamon sugar swirl.
  • Dollop the remaining batter over the cinnamon layer in spoonfuls, then gently coax it together with the back of a spoon or an offset spatula. Take your time to keep the middle layer distinct.
  • Finish by sprinkling the rest of the cinnamon mixture over the top, then bake for 45-60 minutes (check around 50 minutes), or until a toothpick comes out clean.
  • Let the cake cool 10-15 minutes before unlatching the springform pan, so the crumb sets and slices stay clean.

Notes

Storage Tip: Store the coffee cake in an airtight container at room temperature. Never refrigerate it, as cold air stales the tender crumb quickly and turns it dry.
Baking Tip: Cream the butter and sugar for the full 3-4 minutes to trap air, which helps the baking powder and baking soda lift the crumb effectively.
Measurement Tip: For a foolproof result, weigh your ingredients with a kitchen scale (aim for about 240g flour and 200g sugar). If using cups, spoon and level the flour rather than scooping directly, to avoid a heavy crumb.
Substitution Tip: Full-fat Greek yogurt is an excellent 1:1 substitute for the full-fat sour cream, maintaining both tang and moisture.
