Equipment

  • Highball glass
  • Jigger
  • Muddler
  • Bar spoon

Ingredients

  • 3 mint leaves
  • ½ ounce sweet tea syrup
  • ice
  • 2 ounces rum
  • ¾ ounce lime juice from about one fresh lime
  • club soda

Instructions

  • I start by putting the mint leaves and tea syrup right into a highball glass, then I gently press with a muddler just until the leaves smell fragrant. I’m not trying to mash the mint into confetti. A light press releases the oils and gives that fresh, cool aroma without pulling out harsh bitterness.
  • I fill the glass about ¾ full with ice, pour in the rum and lime juice, and then top it up with club soda. You’ll see the drink build in layers for a second, which is always satisfying. I try not to overdo the soda here, because too much can water down the tea flavor.
  • I give everything a quick stir, add any garnish I’m in the mood for, and serve it right away. The best version of this drink is cold, fizzy, and bright. Once it sits, the ice starts winning and the bubbles calm down.

Notes

Variation: For a warmer finish, muddle a thin slice of fresh ginger with the mint, or replace part of the tea syrup with a little ginger-infused syrup.
Mocktail Tip: To make it alcohol free, leave out the rum and top with more club soda. For a sweeter version, use lemon-lime soda instead.
Party Tip: If making a pitcher, mix the mint, syrup, rum, and lime close to serving time, then add ice and club soda right before serving so the drink stays lively.
Troubleshooting: If the drink tastes bitter, muddle the mint more gently. If it tastes flat, add the club soda last and stir lightly. If it tastes watered down, serve it as soon as it is mixed.
Serving Tip: Serve in a highball glass with plenty of ice. A mint sprig and lime wheel or wedge make an easy garnish, and slapping the mint sprig first helps wake up its aroma.
