  • 1/4 cantaloupe, cut into 3/4-inch cubes
  • 1 heirloom tomato, cut into 3/4-inch cubes
  • 1 seedless English cucumber, cut into 3/4-inch cubes
  • 1 avocado, cut into 3/4-inch cubes
  • 6 oz. mozzarella balls, drained and patted dry

  • 1/2 lemon Zest of
  • A pinch of sea salt
  • A dash of freshly cracked black pepper

Instructions

Build the Mosaic

  • Arrange the cubes of watermelon, cantaloupe, heirloom tomato, seedless cucumber, avocado, and mozzarella in a single, snug layer on a large platter. Alternate the colors and textures to create a clean, geometric mosaic effect.

Finish with the Dressing

  • In a small bowl, whisk the balsamic vinegar with the olive oil until the mixture is glossy and well combined. Spoon the dressing evenly over the arranged ingredients, ensuring each piece gets a light coating without blurring the mosaic lines.

Add the Final Garnishes

  • Season the platter with a pinch of sea salt and freshly cracked black pepper. Scatter the mint leaves, julienned basil, and lemon zest over the top to finish.

Notes

Presentation Tip: To keep the mosaic colors crisp and vibrant, use white balsamic vinegar instead of traditional dark balsamic, which can stain the lighter ingredients like mozzarella and cucumber.
Preparation Tip: Pat the mozzarella, tomato, and cucumber dry with paper towels before plating. This prevents excess moisture from pooling on the platter and keeps the presentation neat.
Timing Tip: Assemble the salad close to serving. Add the dressing and salt at the very last second to ensure the produce stays crisp and doesn't release juices too early due to osmosis.
Knife Skill Tip: Use a very sharp chef's knife and a gentle slicing motion rather than pressing down. This is especially important for delicate ingredients like avocado and heirloom tomato to ensure they hold their cube shape.
