Instructions
Mix and shape the meatballs
In a medium bowl, beat the egg with a fork until blended and slightly foamy. Stir in the chopped dill, Italian parsley, panko breadcrumbs, minced garlic, kosher salt, and black pepper to distribute the seasonings evenly.
Add the ground turkey to the bowl and mix gently with the fork just until the dry streaks disappear. Ensure the mixture is uniform but soft; avoid overmixing to prevent toughness.
Wet your hands slightly with water to prevent sticking, then roll the mixture into 16 meatballs (about 1 ounce each). Place them on a parchment-lined sheet pan.
Cook the meatballs, air fryer or oven
Air Fryer Method: Spray the basket generously with olive oil spray. Place the meatballs in a single layer with space between them. Cook at 400°F (200°C) for 8 to 10 minutes, turning halfway through, until browned and cooked through.
Oven Method: Bake on the sheet pan at 400°F (200°C) for 20 minutes. The meatballs should have lightly golden tops and feel springy to the touch.
Toast and simmer the couscous
While the meatballs are cooking, heat a small saucepan over medium heat. Add 1/2 tablespoon of olive oil and the dry pearl couscous. Stir constantly for about 3 minutes until the grains smell nutty and appear lightly toasted.
Pour in the broth and bring the mixture to a boil. Immediately reduce the heat to a gentle simmer, cover, and cook for about 10 minutes until the liquid is fully absorbed and the couscous is tender.
Make the salad and assemble with the creamy base
In a small bowl, combine the diced tomato, cucumber, red onion, fresh parsley, the remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Toss until the salad looks glossy and fresh.
To serve, spread a layer of tzatziki or Greek yogurt (optional creamy base) across the bottom of each bowl. Spoon in the warm couscous, top with the fresh salad and meatballs, and finish with an extra squeeze of lemon if desired.
Notes
Food Safety: Ensure the internal temperature of the turkey meatballs reaches 165°F (74°C) to guarantee they are fully cooked and safe to eat.Storage Tip: For meal prep, store the cucumber salad in a separate container from the warm components to keep the vegetables crisp. Assemble the bowl just before serving.Handling Tip: Keep a small bowl of water nearby to wet your hands before rolling the meatballs. This prevents the mixture from sticking to your skin and helps create smooth, round shapes.Flavor Booster: Do not skip toasting the couscous in olive oil before adding the broth. This simple step unlocks a nutty aroma and prevents the grains from tasting bland.Nutrition information is estimated based on common ingredients and serving sizes and may vary.
