- 2 tablespoon olive oil
- 2 chicken breasts
- 50 g all purpose flour
- 3 cloves garlic minced
- 8 sun-dried tomatoes sliced
- ½ tablespoon smoked paprika
- ½ tablespoon oregano
- ½ tablespoon chilli flakes
- 600 ml chicken stock
- 300 ml single cream
- 2 tablespoon grated parmesan plus extra for garnish
- ½ teaspoon ground pepper
- ½ teaspoon flaky salt
- ½ teaspoon sugar
- 200 g ramen noodles
For the toppings:
- Coriander
- Beansprouts
- Edamame beans
- Spring onion
- Chilli oil
Prep the Chicken and Build the Base
Coat the chicken breasts thoroughly in the all-purpose flour on all sides. This helps with browning and adds body to the final broth.
Heat the olive oil in a saucepan over medium heat. Cook the chicken for 4 minutes per side until the exterior is deeply golden, then remove and set aside.
In the same pan, add the minced garlic, sun-dried tomatoes, smoked paprika, chilli flakes, and oregano. Sauté for a couple of minutes until the garlic is fragrant.
Create the Creamy Broth
Stir in 300ml of chicken stock and the single cream. Add the grated parmesan and whisk until the cheese melts and the broth is smooth.
Return the chicken to the pan, cover with a lid, and simmer for 5 minutes. Transfer the cooked chicken to a board and slice it into strips.
Season the broth base with ground pepper, flaky salt, and sugar, adjusting to taste.
Cook the Noodles and Finish the Bowls
Add the remaining 300ml of chicken stock and the ramen noodles to the saucepan. Cook according to the packet instructions, stirring to prevent clumping.
Remove the pan from the heat and stir in the white miso paste and a squeeze of fresh lime juice for depth and acidity.
Divide the noodles and broth into bowls. Garnish with the sliced chicken, coriander, beansprouts, spring onion, edamame beans, and a drizzle of chilli oil.
Flavor Secret: For a more intense tomato flavor, use a tablespoon of the oil from the sun-dried tomato jar in place of regular olive oil when searing the chicken.
Miso Tip: Always stir in your miso paste after removing the pan from the heat to preserve its delicate umami flavor and prevent it from becoming overly salty.
Soggy Noodle Prevention: If you expect leftovers, store the ramen noodles and the creamy broth in separate containers. This prevents the noodles from absorbing all the liquid and becoming mushy.
