Instructions
Build the Flavor Base
Set a large skillet over medium heat and melt the butter slowly. Cook until the milk solids turn golden brown and smell nutty, then immediately add the onion, celery, and green bell pepper.
Sauté the vegetables for about 5 minutes until they soften and lose their raw bite. Stir in the garlic and cook for 2 more minutes until fragrant.
Cook the Crawfish Filling
Add the crawfish tails, Worcestershire sauce, hot sauce, salt, and cayenne pepper. Stir gently for 3 minutes until the crawfish are heated and any excess liquid has evaporated.
Fold in the chopped green onions and remove from heat. Allow the mixture to cool fully to prevent the mayonnaise and cheese from becoming oily.
Mix and Assemble
Preheat the oven to 350°F. Once the mixture is cool, stir in the mayonnaise, Creole mustard, cheese, and lemon zest until thick and evenly combined.
Cut the bread loaves nearly in half lengthwise. Divide the filling evenly over the bottom halves, spreading it from end to end.
Bake Until Hot and Melty
Fold the tops back over the filling and wrap each loaf tightly in aluminum foil. Place the loaves on a baking sheet.
Bake for 25 to 30 minutes until the bread is hot and the cheese is fully melted. Slice into portions and serve while steamy.
Notes
Preparation Tip: Grate your own provolone or mozzarella cheese for a silkier melt, as pre-shredded bags contain starches that affect texture.Make-Ahead Method: You can prepare the crawfish filling up to 24 hours in advance and store it in the refrigerator until you are ready to assemble and bake.Reheating Advice: For the best results, reheat leftover slices in an air fryer at 350°F for 3 to 5 minutes to restore the crisp crust without making the filling oily.Nutrition information is estimated based on common ingredients and serving sizes and may vary.
