Ingredients
 

  • 1/2 cup Almond flour
  • 2 Tbsp Coconut flour
  • 1/4 tsp Turmeric
  • 1 tsp Poppy seeds
  • 1 pinch Sea salt
  • 1/2 Lemon (juiced and zested)
  • 1/2 tsp Vanilla extract
  • 1 Tbsp Coconut oil or ghee (melted)
  • 1 Tbsp Honey

Optional Drizzle

  • 1 dollop Vanilla yogurt
  • 1 dash Maple syrup

Instructions
 

Toast the poppy seeds

  • Warm a small dry skillet over medium heat, then add the 1 tsp of poppy seeds. Stir for just a moment until they smell nutty and fragrant, then slide them onto a plate so they cool and do not keep toasting.

Mix the dry base

  • In a medium bowl, stir together the Almond flour, Coconut flour, turmeric, toasted poppy seeds, and sea salt until the color looks evenly sunny and speckled.
  • Add a small pinch of ground cardamom and whisk it in well, it should smell citrusy-floral the second it hits the bowl.

Bring it together and shape

  • Pour in the lemon juice and zest, vanilla extract, melted coconut oil or ghee, and honey, then add 1/4 tsp pure lemon extract.
  • Stir until the mixture turns from loose crumbs into a cohesive dough, it should feel slightly tacky but hold its shape when you squeeze it.
  • Roll into 6 equal balls. If the dough feels sticky, chill it briefly for about 5 minutes until it is easy to handle.
  • Place the bites in an airtight container, they will smell like bright lemon and warm spice the moment the lid comes off.

Optional drizzle and freeze set

  • For the drizzle, stir together vanilla yogurt with a dash of maple syrup and vanilla extract, then drizzle it over the bites. Freeze until the topping is firm to the touch, so it sets cleanly instead of smearing.

Notes

Precise Measurements: Coconut flour absorbs a lot of liquid, so use a kitchen scale for consistent dough hydration, especially for meal prep.
Zesting Technique: Use a microplane to zest only the bright yellow layer directly over the bowl to catch all the fragrant lemon oils, avoiding the bitter white pith.
Sticky Dough: If the dough is too sticky to roll, refrigerate it for 5 to 10 minutes to let the coconut flour absorb the moisture before shaping.
Adjusting Consistency: If the mixture is too wet, add a tablespoon of oat or almond flour. If it is too dry or crumbly, add a splash of water or extra lemon juice.
