Equipment

  • Mixing Bowl
  • 8” cast iron pan or small oven proof skillet

Ingredients

  • 15 oz canned corn drained
  • 3 tbsp mayonnaise
  • 1 tsp sugar
  • 1/4 tsp salt
  • pinch of black pepper
  • 1/4 medium size onion finely chopped
  • 1 red chili finely chopped
  • 1 tbsp unsalted butter
  • 1/3 to 1/2 cup shredded mozzarella cheese

Instructions

  • Stir the drained corn, mayonnaise, sugar, salt, black pepper, onion, and chili together in a mixing bowl. Keep mixing until the mayonnaise coats the kernels evenly and the chopped vegetables are distributed throughout.
  • Set an 8-inch cast iron pan or small ovenproof skillet over medium-high heat, melt the butter until bubbling, then sauté the corn mixture for 2 to 3 minutes before leveling it and scattering mozzarella across the surface. A sweet, buttery aroma and softening onion signal that the corn is ready for its cheese topping.
  • Broil on high on the oven’s top rack for 2 to 3 minutes, or keep the pan on the stovetop and cover it until the cheese melts completely. Look for bubbling edges and golden patches with the broiler, or a fully melted, glossy topping with the covered stovetop method, and serve hot.

Notes

Texture tip: Drain the corn into a strainer and blot the kernels dry with paper towels before mixing so excess liquid does not dilute the mayonnaise coating.
Ingredient tip: Chop the onion and red chili to roughly the size of the corn kernels so they soften evenly during the brief sauté.
Doneness: Watch closely under the broiler as the 2-minute mark approaches and remove the skillet once the mozzarella develops golden patches to avoid burning or greasy separation.
Reheating: Refrigerate leftovers promptly in a covered container, then warm gently in a covered skillet over low heat or at reduced microwave power until hot throughout.
