Instructions
Blend the sauce base
In a blender, combine the tomato, garlic, ginger, garam masala, turmeric, cumin powder, coriander powder, paprika, cayenne or red chili powder, onion powder, lemon juice, fenugreek, water, and exactly 2 tablespoons of the drained kidney beans. Blend until the mixture is smooth and frothy.
Pour the blended mixture into a saucepan and cook over medium heat for 6 to 7 minutes, stirring occasionally, until it reduces and thickens enough to coat a spoon.
Blister the beans and finish the spiced mixture
Heat oil in a separate skillet until very hot. Add the remaining kidney beans and fry until the skins crack and blister, creating crisp edges.
Transfer the blistered beans into the saucepan with the sauce base. Add salt, cover, and simmer for 9 to 12 minutes until the beans are tender and have absorbed the flavors.
Prepare the vegetables, grains, and crema
Grill the zucchini and broccoli stems on a grill pan until tender and charred. Season with salt and extra garam masala.
Cook the quinoa or your chosen grain according to package instructions until light and fluffy.
Cube the mango and prepare the crema by blending avocado, cilantro, lime juice, and a splash of water or oil until smooth and pourable.
Assemble the bowl
Build your bowl by layering the grains, fresh greens, roasted vegetables, radish slices, and mango. Spoon the saucy kidney beans over the top and finish with a generous drizzle of the avocado-cilantro crema.
